– 2 tbsp fresh cilantro, chopped (for garnish)
– Cream or yogurt (optional, for serving)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger, sautรฉing until softened, about 5 minutes.
Toss in the bell peppers and chili pepper, cooking for another 3-4 minutes until slightly tender.
Pour in the broth, crushed tomatoes, and tomato paste. Stir in the cumin, paprika, cayenne, salt, and black pepper. Bring the soup to a boil.
Reduce the heat and simmer for about 20 minutes, allowing the flavors to meld.
Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer batches of the soup to a regular blender, blend, and return it to the pot.
