Meorav Yerushalmi, also known as Jerusalem Mix, is a mouth-watering Israeli dish that combines various meats and vegetables in one savory meal. It typically includes beef, chicken, and sometimes lamb, all cooked together with onions, tomatoes, and a variety of spices such as cumin, coriander, and paprika. The mix is slow-cooked until the meat becomes tender and the flavors meld perfectly. Meorav Yerushalmi is traditionally served over rice or couscous, making it a satisfying and comforting meal that’s perfect for sharing with friends and family.
Recipe:
Ingredients:
– 500g beef chuck, cut into large cubes
– 500g chicken thighs, bone-in and skin-on
– 200g lamb shoulder, cut into large cubes (optional)
– 1 large onion, chopped
– 3 tomatoes, chopped
– 4 cloves garlic, minced
– 2 tbsp olive oil
– 1 tbsp ground cumin
– 1 tbsp ground coriander
– 1 tbsp paprika
– 1 tsp turmeric
– 1/2 tsp cinnamon
– Salt and pepper to taste
– Fresh parsley, chopped, for garnish
– Rice or couscous, for serving
Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onions and cook until softened, about 5 minutes.
2. Add the garlic and cook for another minute, until fragrant.
3. Add the beef, chicken, and lamb (if using) to the pot. Season with salt, pepper, cumin, coriander, paprika, turmeric, and cinnamon. Stir well to coat the meat in the spices.
4. Add the chopped tomatoes to the pot. Stir everything together, then cover the pot and reduce the heat to low. Let the mix simmer for about 2 hours, or until the meat is tender. Give the mixture a stir every now and then to ensure even cooking.
5. Once the meat is cooked through, taste and adjust the seasoning if necessary. Garnish with chopped fresh parsley.
6. Serve the Meorav Yerushalmi over rice or couscous, making sure to spoon some of the delicious sauce on top as well. Enjoy your hearty and flavorful Israeli meal!
