Ingredients:
– 4 medium cucumbers or zucchinis
– 1 cup cooked and drained rice
– 1 cup chopped tomatoes

– 1/4 cup olive oil

Instructions:
1. Wash the vegetables thoroughly and cut off their ends.

3. Scoop out the seeds and flesh with a spoon, leaving about 1/4-inch border around the edges.
4. Fill the vegetables with the rice mixture: combine cooked rice, tomatoes, onions, parsley, mint, salt, and pepper in a bowl. Mix well.
5. Preheat your oven to 350°F (175°C).
6. Place the stuffed vegetables into a baking dish or individual ramekins.
7. Drizzle olive oil over the tops of the vegetables.
8. Bake for about 30-45 minutes, until the vegetables are tender and the filling is heated through.
9. Serve hot, garnished with additional fresh herbs if desired.
