Ingredients:
– 1 lb beef shank (or any other type of meat), cut into bite-sized pieces
– 2 tbsp oil
– 1 medium onion, chopped
– 4 cloves garlic, minced
– 1 tomato, chopped
– 1 pc tamarind or guava (about 50g)
– 6 cups water
– 2 pcs radish, sliced
– 1 large eggplant, cubed
– 1 lb string beans, cut into 4 inch pieces
– 1 cup kangkong leaves
– Salt and pepper to taste
Instructions:
1. In a pot, heat oil over medium high heat. Add beef shank and cook until brown on all sides. Remove from pot and set aside.
2. In the same pot, sauté onions, garlic, and tomatoes until softened.
3. Prepare tamarind by soaking it in 1 cup of hot water for about 5 minutes. Mash it to extract its juice. Alternatively, you can use guava instead of tamarind by boiling it in 1 cup of water until it becomes soft and then mashing it.
4. Add the extracted tamarind/guava juice to the pot with onion mixture. Stir well and bring to a boil.
5. Add the cooked beef shank back into the pot. Pour in 6 cups of water, stir well, and let simmer for about 30 minutes or until meat is tender.
6. Add radish, eggplant, string beans, and kangkong leaves to the pot. Season with salt and pepper to taste. Let simmer for another 10-15 minutes or until vegetables are cooked through.
7. Serve hot with rice. Enjoy your sinigang!
