– 1 can (400ml) crushed tomatoes
– 2 tbsp tomato paste
– 1 tsp ground cumin
– 1 tsp paprika
– ½ tsp cayenne pepper (or more, to taste)
– Salt and black pepper, to taste
– 2 tbsp fresh cilantro, chopped (for garnish)
– Cream or yogurt (optional, for serving)
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger, sautéing until softened, about 5 minutes.

Toss in the bell peppers and chili pepper, cooking for another 3-4 minutes until slightly tender.

Pour in the broth, crushed tomatoes, and tomato paste. Stir in the cumin, paprika, cayenne, salt, and black pepper. Bring the soup to a boil.

Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer batches of the soup to a regular blender, blend, and return it to the pot.
