Galbi

Galbi, also known as Korean barbecue short ribs, is a delicious Korean dish that features marinated and grilled beef ribs. The rich flavor profile comes from its unique combination of sweet, savory, and slightly spicy ingredients, such as soy sauce, sugar, garlic, sesame oil, and pepper flakes.

Here’s a simple recipe for Galbi that you can try at home:

Ingredients:
– 2 lbs beef short ribs, sliced into thin strips
– 1/3 cup soy sauce
– 1/4 cup brown sugar, packed
– 1/4 cup finely chopped green onions
– 6 cloves of garlic, minced
– 1 tsp sesame oil
– 2 tbsp rice wine or mirin (optional)
– 1 tbsp honey or corn syrup (optional, for extra sweetness)
– 2 tbsp toasted sesame seeds
– 1/4 tsp crushed red pepper flakes (adjust the amount according to your spice preference)

Instructions:
1. In a large mixing bowl, combine soy sauce, brown sugar, minced garlic, green onions, sesame oil, rice wine or mirin, honey or corn syrup, and crushed red pepper flakes. Whisk all the ingredients together until the sugar is dissolved.
2. Add the sliced beef short ribs to the marinade. Mix well to ensure that all pieces are evenly coated with the sauce.
3. Cover the bowl with plastic wrap or transfer the contents into a resealable plastic bag, and let it marinate in the refrigerator for at least 2-4 hours or overnight. The longer you allow the meat to marinate, the more flavorful it will become.
4. Preheat your grill to high heat. If you don’t have access to a grill, a stovetop with an oiled cast iron skillet can also be used.
5. Remove the short ribs from the refrigerator and let them sit at room temperature for 10-15 minutes before cooking.
6. Place the marinated beef on the preheated grill or skillet, ensuring that they are not overcrowded. Cook each side of the Galbi strips for about 2-3 minutes or until well browned and slightly charred.
7. Once all the Galbi is cooked, sprinkle toasted sesame seeds on top. Serve immediately with steamed rice, pickled radish (kkakdugi), and lettuce leaves for wrapping. Enjoy!

This classic Korean dish is perfect for entertaining friends and family or as a hearty meal for a special occasion. Don’t forget the sides like kimchi and banchan to complete your Galbi experience!
