For the roast:
- 3 pounds beef pot roast (such as chuck or round)
- 2 tablespoons vegetable oil
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup red wine (optional)
Instructions:
- In a large bowl, combine the marinade ingredients. Stir until the sugar has dissolved.
- Add the beef roast to the marinade and make sure it is fully covered. Cover the bowl with plastic wrap or a lid.
- Refrigerate the roast for at least 4 days or up to 6 days, turning the meat every day.
- Preheat your oven to 300ยฐF (150ยฐC).
- Remove the roast from the marinade and pat it dry with paper towels.
- Heat the oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 2-3 minutes per side.
- Add the chopped carrots, celery, and garlic to the pot and sautรฉ for 1 minute.
- Add the beef broth and red wine (if using) to the pot. Bring the mixture to a simmer.
- Transfer the pot roast to the slow cooker or Dutch oven. Cover the pot with a lid or foil.
- Cook the Sauerbraten for 2-3 hours, or until the meat is tender and falls apart easily.
- Remove the roast from the pot and let it rest for 15 minutes before slicing.
Serve the Sauerbraten with your choice of sides, such as potato dumplings (Kartoffelklรถรe), braised red cabbage, or egg noodles. Enjoy!
