Khorovats is an Armenian specialty that translates to “barbecue” in English. It consists of slow-cooked meat over an open flame, typically lamb or pork, seasoned with traditional aromatic herbs and spices for a rich, flavorful taste. This mouthwatering meal is enjoyed throughout Armenia as well as by expatriate communities around the world who continue to celebrate their culinary traditions.
To make Khorovats at home, you will need:
– 2 pounds (900 grams) lamb or pork cut into cubes or pieces
– Sea salt and freshly ground black pepper, to taste
– A bunch of fresh basil leaves, finely chopped
– 1/4 cup extra virgin olive oil
– Juice of one large lemon
– 2 tablespoons Armenian red pepper (or paprika), or to taste
– 6 cloves garlic, minced
– Wooden skewers for barbecuing (soak them in water beforehand)
– A grill or open fire
Follow these steps to cook Khorovats:
1. Preheat the grill or fire to medium-high heat.
2. Season the meat pieces with salt, pepper, and chopped basil.
3. In a large bowl, combine olive oil, lemon juice, red pepper or paprika, and minced garlic. Whisk well.
4. Add the seasoned meat into this marinade, ensuring all pieces are evenly coated. Cover the bowl and let it sit for 2 to 3 hours in the refrigerator to allow the flavors to blend.
5. When ready to cook, thread the meat onto wooden skewers, making sure not to overcrowd them.
6. Place the skewered meat on the grill or open fire and cook until well browned on all sides with an internal temperature of at least 145°F (63°C) for pork or 160°F (71°C) for lamb, to ensure it’s cooked through.
7. Once the meat is fully cooked, remove from heat and let them rest for a few minutes before serving.
8. Enjoy your delicious Khorovats with a side of fresh vegetables, bread, and a crisp glass of wine.
