– Salt and black pepper to taste
– 4 cups beef or chicken stock
– 2 tbsp olive oil
– Fresh cilantro for garnish (optional)
Instructions:
- In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and garlic, sautéing until fragrant, about 3 minutes.

Add both types of meat to the pot and cook until lightly browned on all sides, stirring occasionally. This should take around 5-7 minutes.

Include the bell peppers, diced tomatoes, cumin, paprika, oregano, bay leaf, salt, and pepper. Cook for another 2 minutes while stirring frequently.

Pour in the stock, ensuring everything is well-covered. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 45 minutes or until the meats are tender.
