Qutab

– 1/2 tsp cumin powder
– 1/2 tsp coriander powder
– 1/4 tsp turmeric powder
– 1/4 tsp red chili flakes
– Salt, to taste

Instructions:

  1. In a large mixing bowl, combine the all-purpose flour and salt. Slowly add water while stirring until a dough forms. Knead the dough for a few minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
  2. While the dough is resting, prepare the filling by sautéing chopped spinach or leek in a pan with oil. Add onion, cumin powder, coriander powder, turmeric powder, red chili flakes, and salt to taste. Cook until the vegetables are tender and all ingredients are well combined.
  3. Divide the dough into 8 equal portions and roll each portion into a ball. Roll out each ball on a lightly floured surface to form a thin circle or round shape.
  4. Spoon about 2-3 tbsp of filling onto one side of the rolled-out dough, leaving enough space around the edges to seal it. Fold the other half of the dough over the filling and press the edges together to seal.
  5. Heat oil in a large pan over medium heat. Carefully place each Qutab into the pan and cook for 2-3 minutes on each side until both sides are golden brown and crispy.
  6. Serve hot with yogurt or raita for dipping. Enjoy!
