Cachupa is a traditional Portuguese dish that originated in the Azores archipelago. It’s a hearty and flavorful stew made with various types of beans, meat, corn, and sausage. The dish is usually served during special occasions or family gatherings, as it is considered a symbol of unity and abundance. Here’s a simple recipe to cook Cachupa:
Ingredients:
– 1 lb dried white beans (navy beans or cannellini beans)
– 1 lb smoked sausage, sliced
– 1 lb beef chuck roast, cut into bite-sized pieces
– 2 large onions, chopped
– 4 cloves garlic, minced
– 2 cans (15 oz each) diced tomatoes
– 3 cups corn kernels (fresh or frozen)
– 6 cups water
– Salt and pepper to taste
– Olive oil for cooking
– Fresh parsley for garnish
Instructions:
- Rinse the beans thoroughly and pick out any stones or debris. Soak the beans in water overnight, or for at least 8 hours. This will help reduce cooking time.
-
In a large pot, heat some olive oil over medium-high heat. Add the sliced smoked sausage and cook until browned on all sides, about 5 minutes. Remove the sausage from the pot and set aside.
-
Add the beef chuck roast to the pot and cook until browned on all sides, about 7 minutes. Remove the beef from the pot and set it aside with the sausage.
-
Lower the heat to medium and add the chopped onions to the pot. Cook until the onions are softened and translucent, about 5 minutes.
-
Add the minced garlic and cook for another minute until fragrant.
-
Stir in the diced tomatoes with their juice, the cooked sausage, beef, and soaked beans (along with their soaking water). Add the corn kernels as well.
-
Season the mixture with salt and pepper to taste.
-
Bring the pot to a boil, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender and the meat is falling apart. Stir occasionally to prevent sticking.
-
Taste the cachupa and adjust seasoning as needed. Serve hot, garnished with fresh parsley. Enjoy your delicious Cachupa!
