Chelo kebabs

Chelo Kebab is a delicious and popular dish in South Asian cuisine. It’s a type of kebab that consists of marinated and grilled lamb or chicken pieces, served on a skewer with onions and peppers. Here’s a simple recipe to make Chelo Kebab at home:

Ingredients:
– 500g lamb or chicken legs/thighs, cut into chunks
– 2 onions, sliced
– 1 green pepper, sliced
– 1 red pepper, sliced
– 2 tablespoons of yoghurt
– 2 cloves of garlic, crushed
– 1 inch ginger, crushed
– 1 teaspoon salt
– 1/2 teaspoon black pepper powder
– 1/2 teaspoon cumin powder
– 1/2 teaspoon coriander powder
– 1/4 teaspoon red chilli powder (adjust to your preference)
– 1 tablespoon of oil
– Lemon wedges to serve

Method:

  1. In a non-reactive bowl (glass or ceramic), combine the yoghurt, garlic, ginger, salt, black pepper, cumin, coriander, and chilli powder. Add the lamb or chicken pieces and coat them well with the marinade. Cover and refrigerate for at least 2 hours or overnight for best results.

  2. Thread the marinated meat, onions, and peppers onto skewers, alternating between the ingredients. You can use metal or wooden skewers – just make sure to soak the wooden ones in water for at least 30 minutes before using.

  3. Heat a grill pan or griddle pan over medium-high heat and add the oil. Once hot, carefully place the skewers in the pan and cook for 8-10 minutes, turning occasionally, until the meat is cooked through and lightly charred.

  4. Serve the Chelo Kebab with lemon wedges on the side, and enjoy! These kebabs are best when served hot with some refreshing sides like raita (yoghurt dip) or a simple salad.

Feel free to adjust the spice levels to your taste, and you can even add more vegetables like mushrooms or zucchini to the skewers if desired. Enjoy the delicious flavors of Chelo Kebab in the comfort of your home!
