Here’s a simple recipe to make goi cuon at home:

Ingredients
– 8 rice paper wrappers
– 1/2 lb cooked shrimp (peeled and deveined)
– 1 cup cooked bean sprouts
– 1 cup shredded carrots
– 1 cup julienned cucumber
– 1/2 cup chopped fresh cilantro
– 1/4 cup chopped green onions
– 1 tbsp fish sauce
– 1 tbsp sugar
– 1 tbsp lime juice
– 1 tsp grated ginger

Instructions
1. Prepare the dipping sauce by mixing fish sauce, sugar, lime juice, and grated ginger in a small bowl.
2. Soak rice paper wrappers in warm water for about 15 seconds or until they become soft and pliable.
3. Place a wrapper on a clean surface and add a small amount of cooked shrimp, bean sprouts, carrots, cucumber, cilantro, and green onions in the center.
4. Fold the sides of the wrapper over the filling and roll it up tightly.
5. Repeat with remaining wrappers and filling.
6. Serve goi cuon with the prepared dipping sauce on the side.
