To cook Beef Wellington, you will need:
Ingredients:
– 2 lbs beef tenderloin
– 6 slices prosciutto
– 4 oz mushrooms (button or cremini), finely chopped
– 1 tbsp butter
– 3 cloves garlic, minced
– Salt and pepper to taste
– 1 sheet puff pastry
– 1 egg, beaten
– 2 tbsp Dijon mustard
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Pat the beef tenderloin dry with paper towels and season with salt and pepper on all sides.
3. Heat a large skillet over medium-high heat and add a splash of oil. Sear the beef tenderloin for 1-2 minutes per side, until it’s browned on all sides. Remove from the pan and let it rest.
4. In the same skillet, melt butter over medium heat and sauté the mushrooms and garlic until they are cooked through and the moisture has evaporated. Season with salt and pepper to taste. Set aside to cool.
5. On a floured surface, roll out your puff pastry into a rectangle large enough to encase the beef tenderloin completely.
6. Brush the entire sheet of puff pastry with Dijon mustard.
7. Place the cooked mushroom mixture on top of the puff pastry, leaving a 1-inch border around the edges.
8. Place the seared beef tenderloin in the center of the mushroom layer and wrap it completely with the puff pastry, tucking in any excess dough as you go. Make sure to seal all edges well to prevent the filling from escaping during cooking.
9. Brush the entire surface of the Beef Wellington with beaten egg.
10. Place the Beef Wellington on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and cooked through (internal temperature of 145°F/63°C).
11. Remove from the oven and let it rest for 10-15 minutes before slicing and serving.
