– 1 package (approx. 24 sheets) of phyllo dough
– 3 cups whole milk
– 2 cups farmer’s cheese (or any fresh, soft cheese with similar consistency)
– 1 cup shredded feta cheese
– 2 large eggs
– 1/4 cup all-purpose flour
– 2 tablespoons chopped fresh dill or parsley (or a mix of both)
– Salt and black pepper to taste
– 3 tablespoons butter, melted
– 1 egg, beaten (for brushing the crust)
Instructions:
- Preheat your oven to 350°F (180°C). Line a 9-inch pie dish with one layer of phyllo dough, making sure it covers the bottom and sides. Brush the surface lightly with melted butter. Repeat this process with another sheet of phyllo, creating a double crust. Set aside any leftover sheets for later use.
In a large bowl, combine milk, farmer’s cheese, feta cheese, eggs, flour, dill (or parsley), salt, and pepper. Mix until well blended.
Pour the cheese mixture into the prepared pie crust. Fold over any excess phyllo edges to seal the filling inside.
Cover the pie with aluminum foil and bake for 40 minutes. Remove the foil and continue baking for another 20-25 minutes, or until the top is golden brown and crispy.
Let the banitsa cool slightly before slicing. Serve warm or at room temperature, garnished with fresh herbs if desired.
