Ingredients:
– 2 kg (4.4 lbs) beef chuck or brisket, cut into 2.5 cm (1 inch) cubes
– 3 tbsp dried oregano
– 1 tbsp ground cumin
– 1 tsp ground chili powder (adjust to taste)
– 1 tsp salt
– 1/2 tsp black pepper
– 4 cloves garlic, minced
– 1 large onion, chopped
– 2 cans (400g each) diced tomatoes
– 1 cup (250 ml) beef stock or broth
– 2 tbsp apple cider vinegar
– 2 bay leaves
– 2 tbsp vegetable oil
Instructions:
- In a large bowl, combine the cubed beef with oregano, cumin, chili powder, salt, pepper, garlic, and half of the chopped onion. Mix well to coat the meat evenly. Set aside for at least 30 minutes to marinate (or refrigerate overnight for better flavor).

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add the remaining half of the chopped onion and cook until translucent, about 5 minutes.

Brown the beef in batches, making sure not to overcrowd the pan. Cook each batch until browned on all sides, about 2-3 minutes per side. Transfer the browned meat to a plate.

Add the diced tomatoes, beef stock, vinegar, bay leaves, and remaining spices to the pot. Stir well to combine. Return the browned beef to the pot.

Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for 2-3 hours or until the meat is tender and easily shreds with a fork. Shake the pot occasionally during cooking.

Once cooked, remove the lid and continue to cook for another 30 minutes to thicken the sauce. Taste and adjust seasoning if needed.
