– 500g mixed mushrooms (button, cremini, shiitake, or your preference), sliced
– 1/2 cup dry white wine
– 1 cup heavy cream
– 1/4 cup fresh parsley, chopped
– Salt and freshly ground black pepper to taste
– Grated Parmesan cheese for serving (optional)

Instructions:

1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook penne according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

2. Sauté Mushrooms: Heat olive oil in a large skillet over medium heat. Add shallot and garlic, sautéing for 2 minutes until fragrant. Then add mushrooms and cook until they release their moisture and start to brown, approximately 5-7 minutes.

3. Deglaze with Wine: Pour in the white wine and scrape up any browned bits from the bottom of the pan with a wooden spoon. Let the wine reduce by half.

4. Add Cream: Stir in heavy cream and bring to a simmer. Season with salt and pepper to taste. Allow the sauce to thicken slightly, stirring occasionally.

5. Combine Pasta and Sauce: Add cooked penne to the skillet and toss to coat evenly with the creamy mushroom sauce. If the sauce appears too thick, add some reserved pasta water to adjust consistency.
