- Vegetable oil for sautéing
Instructions:
- Prepare the Ingredients: Chop and slice all vegetables. Rinse the beef shank/chuck under cold water to remove excess blood.
Sauté Aromatics: Heat a large pot over medium heat and add a bit of vegetable oil. Sauté the chopped onion until translucent, then add minced garlic and cook for another minute.
Add Beef: Add the meat to the pot and brown it on all sides. Remove from the pot and set aside.
Cook Vegetables: In the same pot, add more oil if needed, then sauté the carrots and bell peppers until they begin to soften.
Deglaze Pot: Pour in a little beef broth or water to deglaze the pot, scraping up any brown bits from the bottom.
Combine Ingredients: Return the meat to the pot with the onions, garlic, tomatoes (both canned and diced), remaining broth, soy sauce, salt, black pepper, bay leaf, cloves, and rosemary (if using).
Simmer: Bring everything to a boil, then reduce heat to low and let it simmer for about 1 hour or until the meat is tender.
Adjust Seasoning: Taste and adjust seasoning if necessary. Let it simmer for another 20-30 minutes to meld flavors.
Serve: Ladle the stew over steamed rice. Serve with additional chopped onions, cilantro, or sliced chili peppers on top if desired.
