Fish soup is a hearty, savory dish that varies in ingredients and preparation methods across different regions, particularly in Mediterranean and Northern European countries like Portugal, Spain, France, and Scandinavia. It’s characterized by its rich broth infused with various seafood elements, often featuring a base of fish stock or water.
Here is a classic recipe for Fish Soup (also known as New England Clam Chowder, given its creamy consistency), which includes both fish and clams:
New England-Style Fish Soup Recipe
Ingredients:
1. 2 lbs mixed white fish (like cod, haddock, or pollock), cut into chunks
2. 28 oz canned diced tomatoes
3. 4 cups water
4. 1 large onion, chopped
5. 3 cloves garlic, minced
6. 3 stalks celery, chopped
7. 1 large potato, peeled and diced
8. 1 bay leaf
9. Salt and pepper to taste
10. 2 tbsp olive oil
11. 4 slices bacon, diced
12. 2 cups heavy cream (optional, for a creamier soup)
13. 2 dozen littleneck clams, scrubbed and rinsed
14. 1/4 cup chopped fresh parsley
Instructions:
- In a large pot, cook the diced bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
Add the chopped onion, celery, and garlic to the pot with the rendered bacon fat, and sauté until softened.
Return the crispy bacon to the pot and add the diced tomatoes (with juice), water, diced potato, bay leaf, salt, and pepper. Bring the mixture to a boil.
Reduce heat, cover, and let simmer for about 20 minutes or until the potato is tender.
While the soup is simmering, steam the clams in a separate pot with a bit of white wine and water. Once opened, remove from heat and set aside. Discard any clams that do not open.
Once the potato is cooked, add the chunks of fish to the soup. Cook for about 5 minutes or until the fish is opaque and flakes easily with a fork.
If using heavy cream, stir it into the soup now. Add the steamed clams and chopped parsley. Stir gently to combine.
Taste and adjust seasoning if necessary. Serve hot, optionally with crusty bread on the side.
Enjoy your homemade Fish Soup! This comforting meal is perfect for a cold day or when you’re looking for a satisfying seafood dish.
