
What is Haneeth?
Haneeth (هانيت) is a traditional Yemeni dish that consists of rice cooked with meat or fish broth, onions, garlic, and spices. It’s a flavorful and aromatic meal that is often served on special occasions. The name “Haneeth” comes from the Arabic word for “guest,” reflecting its role as a welcoming dish for visitors.
Recipe: Haneeth (Yemeni Rice with Meat Broth)
Ingredients:
For the broth:
- 1 pound beef or lamb bones
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and black pepper, to taste
- 4 cups water
For the rice:
- 1 cup long-grain white rice
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- Salt and black pepper, to taste
- 4 cups water
Instructions:
- Prepare the broth: Preheat your oven to 350°F (175°C). Place the bones on a baking sheet and roast them in the oven for 30 minutes. Remove from the oven and add the chopped onions, garlic, cumin, coriander, salt, and black pepper. Pour in the water, making sure that the bones are covered.
- Simmer the broth: Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, or until the liquid has reduced slightly and the flavors have melded together.
- Cook the rice: Heat the oil in a large saucepan over medium heat. Add the chopped onion and cook until it’s translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the rice and spices: Add the rice to the saucepan and stir well to combine with the onions and garlic. Cook for 1-2 minutes, or until the rice is lightly toasted.
- Add the broth and water: Pour in the simmered broth and add enough water to cover the rice by about an inch. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the liquid has been absorbed and the rice is cooked.
- Season and serve: Fluff the rice with a fork and season with salt and black pepper, if needed. Serve hot, garnished with chopped fresh parsley or cilantro, if desired.
