Ingredients:
– 2 lbs beef stew meat
– 1 tbsp olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 2 carrots, peeled and chopped
– 2 stalks celery, chopped
– 1 lb potatoes, chopped into bite-sized pieces
– 1 can (14 oz) porter beer
– 1 can (14 oz) beef broth
– 1 tbsp Worcestershire sauce
– 2 bay leaves
– Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
2. Add the onion to the pot and cook for 3-4 minutes, or until softened. Add the garlic, carrots, and celery and cook for an additional 3-4 minutes, stirring occasionally.
3. Return the beef to the pot and add the potatoes. Pour in the porter beer, beef broth, Worcestershire sauce, and bay leaves. Stir to combine.
4. Bring the stew to a simmer and cover. Reduce heat to low and cook for 1-2 hours, or until the beef is tender and the vegetables are cooked through. Add salt and pepper to taste.
