– 1 tablespoon grated ginger
– 1 teaspoon ground allspice
– ½ teaspoon ground cinnamon
– ¼ teaspoon ground nutmeg
– 2 bay leaves
– 400ml coconut milk
– 2 medium potatoes, peeled and cubed
– 1 large tomato, diced
– 1 cup green peas (fresh or frozen)
– Salt and pepper to taste
– Chopped fresh cilantro for garnish (optional)
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
