– 1 small onion, finely chopped
– 1/4 cup fresh parsley, chopped
– Salt and freshly ground black pepper to taste
– 1 teaspoon sugar (optional)
Instructions:
- Place the potatoes in a large pot and cover them with cold water. Bring the water to a boil over high heat. Reduce the heat to medium-low and let them simmer until tender, about 20-25 minutes. The potatoes should be cooked through but not mushy. Drain and let them cool down slightly.
While the potatoes are cooking, prepare the other ingredients. Chop the eggs, parsley, and onion finely. Mix them in a large bowl with mayonnaise, mustard, sugar (if using), salt, and pepper.
Once the potatoes have cooled enough to be handled, peel them and cut them into 1-inch cubes. Add the warm potatoes to the dressing mixture in the bowl. Use a spoon or your hands to gently mix everything together until well combined, taking care not to mash the potatoes.
Cover the bowl and refrigerate the potato salad for at least 1 hour to allow the flavors to meld. The longer it chills, the better the flavors will develop.
