– 1/4 cup coconut milk
– 1 tbsp tomato paste
First, cut the fish into bite-sized pieces. Set aside.
Next, chop the onions, tomatoes, and hot peppers into small pieces. Mince the garlic if you prefer.
In a large pan or skillet, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent.
Add the minced garlic, ground ginger, paprika, cayenne pepper, and black pepper to the pan. Stir well and cook for 1-2 minutes until fragrant.
Add the chopped tomatoes and hot peppers to the pan. Cook for 5-7 minutes or until the tomatoes are softened and the mixture has thickened slightly.
Add the fish pieces to the pan, along with salt, chicken broth, and coconut milk. Stir well to combine everything.
Cover the pan with a lid and let the fish cook for 10-15 minutes or until it is fully cooked and flaky.
Stir in the tomato paste and cook for an additional 2-3 minutes.
Serve the boko boko hot, garnished with chopped parsley or cilantro if desired. This dish pairs well with rice or plantains. Enjoy!
