What is Laplap?
Laplap is a traditional dish from Papua New Guinea, made from a filling of vegetables, meat or seafood, wrapped in a leaf called “bilum” (similar to a banana leaf). The leaf is used as a natural wrapping paper, and the food is steamed to perfection. This unique cooking method imparts a distinct flavor and aroma to the dish.
Recipe: Laplap with Chicken Filling
Ingredients:
For the filling:
- 1 pound boneless, skinless chicken breast or thighs, cut into small pieces
- 2 medium-sized onions, diced
- 2 cloves of garlic, minced
- 1 cup mixed vegetables (such as carrots, potatoes, and green beans)
- 1 tablespoon coconut oil
- Salt and pepper to taste
For the bilum leaves:
- Fresh bilum leaves or banana leaves
Instructions:
- Prepare the filling: In a pan, heat the coconut oil over medium heat. Add the chicken, onions, garlic, and mixed vegetables. Cook until the chicken is cooked through and the vegetables are tender.
- Prepare the bilum leaves: Cut the leaves into large squares, about 12 inches (30 cm) per side.
- Assemble the Laplap: Place a spoonful of the filling in the center of each leaf square. Fold the two opposite sides of the leaf over the filling, then fold up the bottom half and roll the Laplap into a neat package. Repeat with the remaining ingredients.
- Steam the Laplap: Place 2-3 Laplaps in a steamer basket lined with cheesecloth or a clean cloth. Steam over boiling water for 15-20 minutes, or until the leaves are tender and the filling is hot.
- Serve: Unwrap the Laplap and serve hot with your favorite sides, such as rice, vegetables, or a salad.
Tips
- Fresh bilum leaves can be difficult to find outside of Papua New Guinea. You can substitute with banana leaves or even parchment paper as a makeshift wrapping material.
- To make the dish more flavorful, add some traditional PNG spices like ground ginger, turmeric, and chili peppers to the filling.
- Laplap is best served immediately after steaming, but it can be refrigerated for up to 2 days and reheated before serving.
