- 1 tsp caraway seeds
- 1/2 tsp ground allspice
- 1/4 tsp red pepper flakes (adjust to taste)
- 1 tbsp Dijon mustard
- 1 egg
- 1/4 cup (60ml) heavy cream or whole milk
- 8-10 pieces of bratwurst casing (natural or artificial)
- Vegetable oil for frying
Instructions:
- Combine Meats and Spices: In a large bowl, mix together the chopped pork, veal (if using), onion, garlic, salt, pepper, caraway seeds, allspice, red pepper flakes, Dijon mustard, and egg. Pour in the heavy cream or milk and mix well until all ingredients are thoroughly combined.
Fill Casings: Carefully insert the meat mixture into the bratwurst casings, filling them about three-quarters full. Twist the ends of the casings tightly to seal. If using natural casings, you may need to soak them in warm water for 30 minutes before filling to soften them.
Refrigerate: Cover the filled casings and refrigerate for at least 1 hour, or up to overnight, to allow the flavors to meld.
Preheat Grill or Skillet: Heat a grill or large skillet over medium-high heat. Lightly oil the grates or skillet with vegetable oil.
Cook Bratwurst: Grill the bratwurst for 8-10 minutes per side, turning occasionally, until they are nicely browned and cooked through (the internal temperature should reach 160°F/71°C). If using a skillet, you may need to add a little water or broth to prevent sticking.
Serve: Transfer the cooked bratwurst to a platter and let them rest for a few minutes before slicing. Serve with your favorite sides such as mashed potatoes, sauerkraut, potato salad, or a crisp salad.
