Here’s a simple recipe to cook Qutab:
Ingredients:
– 2 cups all-purpose flour
– 1 tsp salt
– 1/2 cup water
– 3 tbsp oil (for frying)
Filling:
– 2 cups chopped spinach or leek
– 1/4 cup finely chopped onion
– 1/2 tsp cumin powder
– 1/2 tsp coriander powder
– 1/4 tsp turmeric powder
– 1/4 tsp red chili flakes
– Salt, to taste
Instructions:
- In a large mixing bowl, combine the all-purpose flour and salt. Slowly add water while stirring until a dough forms. Knead the dough for a few minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
- While the dough is resting, prepare the filling by sautéing chopped spinach or leek in a pan with oil. Add onion, cumin powder, coriander powder, turmeric powder, red chili flakes, and salt to taste. Cook until the vegetables are tender and all ingredients are well combined.
- Divide the dough into 8 equal portions and roll each portion into a ball. Roll out each ball on a lightly floured surface to form a thin circle or round shape.
- Spoon about 2-3 tbsp of filling onto one side of the rolled-out dough, leaving enough space around the edges to seal it. Fold the other half of the dough over the filling and press the edges together to seal.
- Heat oil in a large pan over medium heat. Carefully place each Qutab into the pan and cook for 2-3 minutes on each side until both sides are golden brown and crispy.
- Serve hot with yogurt or raita for dipping. Enjoy!
Note: You can also experiment with different fillings like potatoes, minced meat, or a combination of vegetables to suit your taste preferences.
