Crack Conch with Peas & Rice

- 1 lb (450g) fresh conch meat, chopped into bite-sized pieces
- 1 cup (185g) green peas
- 2 cups (360g) long-grain white rice
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, any color, diced
- 1 can (14 oz/400ml) coconut milk
- 2 cups (475ml) fish or seafood broth
- 2 tablespoons (30ml) olive oil
- 1 teaspoon (5ml) ground turmeric
- 1 teaspoon (5ml) paprika
- 1/2 teaspoon (2.5ml) dried thyme
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
- Lime wedges, optional
Instructions:
- Prepare the Conch: If using fresh conch, clean it thoroughly and ‘crack’ or chop into small pieces. If using pre-cut conch (like conch ‘fritters’), proceed to the next step.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and diced bell pepper, cook for another 2 minutes.
Increase heat to high, add the chopped conch to the pot, and stir to combine with the vegetables. Cook for approximately 5 minutes or until the conch is opaque, stirring occasionally.
Sprinkle in turmeric, paprika, thyme, salt, and pepper. Stir well to coat the conch in the spices.
Pour in the coconut milk and fish or seafood broth. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 15-20 minutes, stirring occasionally until the conch is tender.
While the conch is cooking, prepare the rice according to package instructions.
Once the conch is done, stir in the green peas and cook for an additional 2-3 minutes until the peas are heated through.
