Ulkoy: A Traditional Turkish Delicacy
Ulkoy, also known as Turkish meatball or köfte, is a beloved culinary gem in Turkish cuisine. This savory dish consists of flavorful, minced meat balls typically served with a side of sauce and accompanied by rice or bread. Ulkoy offers a delightful balance of spices and textures, making it a popular choice for both everyday meals and special occasions.
Recipe: Traditional Ulkoy (Turkish Meatballs)
Ingredients:
– 500g minced lamb or beef (or a mix of both)
– 1 large onion, finely chopped
– 2 cloves garlic, minced
– 1 egg
– 1/4 cup fresh parsley, finely chopped
– 1 tablespoon dried oregano
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– Salt and freshly ground black pepper to taste
– 2 tablespoons olive oil
– All-purpose flour for coating (optional)
Instructions:
- Prepare the Meat Mixture: In a large bowl, combine minced meat, chopped onion, minced garlic, egg, parsley, oregano, cumin, paprika, salt, and pepper. Mix everything well with your hands until all ingredients are evenly incorporated.
Form the Ulkoy: Take a small amount of the meat mixture and roll it between your palms to form a ball about 1-inch in diameter. Repeat this process until you’ve used up all the meat mixture, making around 10-12 meatballs. (For easier handling, lightly coat your hands with flour.)
Cook the Meatballs: Heat olive oil in a large skillet over medium-high heat. Place the formed meatballs into the skillet and cook them for approximately 4-5 minutes on each side or until they are nicely browned all over. Be careful not to overcrowd the pan, cooking them in batches if necessary.
Serve: Once cooked, transfer the Ulkoy to a serving plate. You can serve them with a side of tomato sauce (often called “salsa” in Turkish cuisine), yogurt sauce (yogurt, garlic, and mint), or creamy garlic sauce. Accompany them with rice pilaf or crusty bread for dipping into any leftover sauces.
Enjoy your homemade Ulkoy! This traditional dish is perfect for family gatherings or as a tasty addition to any meze table.
