What is Kebbah?
Kebbah (also spelled as Kubbeh or Kubbah) is a traditional Middle Eastern dish made from ground meat and bulgur (cracked wheat). The mixture is formed into small patties, balls, or cylinders and then cooked in oil. Kebbah can be served as an appetizer, main course, or even as a snack.

Classic Kebbah Recipe
Ingredients:
- 1 pound ground meat (beef, lamb, or a combination of the two)
- 1 cup bulgur
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions:
- In a large mixing bowl, combine ground meat, bulgur, chopped onion, minced garlic, salt, and black pepper.
- Mix all the ingredients well with your hands until they are just combined. Be careful not to overmix.
- Divide the mixture into 4-6 portions, depending on how large you want your kebbahs to be.
- Shape each portion into a ball or a cylinder. You can also shape them into patties if you prefer.
- Heat about 1/2 inch (1 cm) of vegetable oil in a deep frying pan over medium-high heat.
- When the oil is hot, add the kebbahs and fry until they are golden brown on all sides, about 3-4 minutes per side.
- Remove the kebbahs from the oil with a slotted spoon and drain on paper towels.
- Serve warm or at room temperature. You can also refrigerate or freeze them for later use.
Variations:
- To add extra flavor, you can add chopped parsley, cilantro, or paprika to the mixture before shaping it into kebbahs.
- For a different texture, you can add some breadcrumbs or grated zucchini to the mixture.
- Kebbahs can be baked in the oven instead of fried. Simply place them on a baking sheet lined with parchment paper and bake at 375°F (190°C) for about 20-25 minutes.
