 
 What is Bob Chorba?
Bob chorba (also spelled bobcza) is a traditional Polish soup made from beef tripe (cow stomach lining). The name “bob” comes from the Polish word for tripe, and “chorba” means broth or soup. Despite its unusual ingredient, bob chorba has been a beloved comfort food in Poland for centuries.
Recipe: Bob Chorba (Beef Tripe Soup)
Ingredients:
- 500g beef tripe, cleaned and cut into small pieces
- 2 medium onions, chopped
- 3 cloves of garlic, minced
- 1 large carrot, peeled and grated
- 1 large celery stalk, chopped
- 1 can (400ml) of tomato puree
- 2 liters of beef broth or water
- Salt and black pepper to taste
- Fresh parsley, chopped (optional)
Instructions:
- In a large pot, sauté the onions, garlic, carrot, and celery in a little oil until they’re soft and fragrant.
- Add the tripe pieces and cook for 5 minutes, stirring occasionally.
- Pour in the tomato puree and beef broth/water. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
- Season with salt and black pepper to taste.
- Serve hot, garnished with chopped parsley if desired.
Tips:
- For a more intense flavor, use beef broth instead of water.
- If you can’t find beef tripe, you can substitute it with pork tripe or even lamb’s stomach lining (although the flavor will be slightly different).
- Bob chorba is traditionally served with rye bread, potatoes, or egg noodles. Feel free to choose your favorite accompaniment!
