Instructions:

    • Divide the dough into small pieces and shape each piece into a long, thin cylinder. Cut into desired lengths (usually around 2-3 inches).
  2. Cook the rice cakes:
    • Bring a large pot of water to a boil.
    • Add the rice cakes to the boiling water and cook for about 5-7 minutes or until they float to the surface.
    • Remove the cooked rice cakes from the pot with a slotted spoon and rinse them under cold running water. Drain well.
  3. Make the sauce:
    • In a small bowl, whisk together the Gochujang, soy sauce, sugar, Korean chili flakes, garlic, and ginger until smooth.
    • Add in the water and whisk until combined.
  4. Stir-fry the rice cakes with the sauce:
    • Heat a large skillet or wok over medium-high heat.
    • Add 1-2 tablespoons of vegetable oil to the pan.
    • Once hot, add the cooked rice cakes and stir-fry for about 5 minutes or until they are well coated with the sauce.
    • Continue cooking for another minute or until the sauce has thickened slightly.
  5. Serve:
    • Transfer the Tteokbokki to a serving dish or individual plates.
    • Garnish with chopped green onions, toasted sesame seeds, and a sprinkle of crushed peanuts (optional).
    • Serve immediately while warm.

Tips and Variations:

  • Adjust the level of spiciness by adding more or less Korean chili flakes.
  • Add some sliced fish cakes, boiled eggs, or kimchi for added texture and flavor.
  • Use different types of rice flour or add other ingredients like sesame seeds or chopped vegetables to create unique variations.
