Salmon and Rice Pasty
This Salmon and Rice Pasty is a delightful fusion of flavors and textures, perfect for a savory snack or light meal. The combination of flaky salmon, creamy rice, and crisp pastry makes for a satisfying treat. It’s versatile too; you can add other ingredients like spinach, peas, or cheese according to your preference.

Ingredients:
1. 2 sheets of puff pastry (about 250g each)
2. 200g cooked sushi rice
3. 200g flaked smoked salmon
4. 1 small onion, finely chopped
5. 1 clove garlic, minced
6. 1 egg, beaten (for egg wash)
7. Salt and pepper to taste
8. Optional: Fresh dill, lemon zest, or grated cheese for added flavor
Instructions:
- Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper.

In a pan, sauté the finely chopped onion in a bit of oil over medium heat until softened but not browned. Add the minced garlic and cook for another minute.

Remove from heat and let cool slightly. In a mixing bowl, combine the cooled onion-garlic mixture with the cooked sushi rice and flaked salmon. Season with salt and pepper. If desired, add chopped fresh dill, grated cheese, or lemon zest for extra flavor.

Roll out one sheet of puff pastry on a lightly floured surface to about 30×20 cm (12×8 inches). Cut into four equal squares.

Spoon a generous amount of the salmon-rice mixture onto each pastry square, leaving a small border around the edges.

Brush the borders with the beaten egg to act as a ‘glue’ for sealing. Fold over the corners to meet in the center, pressing gently to seal into a neat triangle or square. You can also use a pastry cutter or fork to press down on the edges to ensure they’re sealed well.

Place the pastries on the prepared baking tray, brush the tops with more egg wash for a golden finish, and cut a small slit in the top of each one to allow steam to escape during baking.

Bake in the preheated oven for about 20-25 minutes, or until the pastries are golden brown.

This recipe makes 4 large pasties, but you can adjust the ingredients to make more or fewer depending on your needs. They’re excellent served with a side salad or some dipping sauce like tartar or cocktail sauce.
