
What is Garudiya?
Garudiya (also spelled as Gurdiya) is a popular Nepalese dish made with rice flour dumplings served in a flavorful broth or soup. The word “garud” means “bird” in Nepali, which refers to the shape of the dumplings, resembling small birds. Garudiya is often enjoyed during special occasions and festivals in Nepal.
Recipe: How to Cook Garudiya
Ingredients:
For the Dumplings (Garuds):
- 2 cups rice flour
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup lukewarm water
- Ghee or oil for frying
For the Broth:
- 4 cups vegetable broth (or chicken broth)
- 2 tablespoons ghee or oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt, to taste
- Fresh cilantro, for garnish
Instructions:
- Prepare the Dumplings:
- In a large mixing bowl, combine rice flour, all-purpose flour, salt, and baking powder.
- Gradually add lukewarm water to the mixture and knead until a smooth dough forms.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Shape the Dumplings:
- Divide the dough into small portions, about the size of a walnut.
- Shape each portion into a small ball and then flatten it slightly to resemble a bird’s beak (or any other shape you prefer).
- Fry the Dumplings:
- Heat a deep frying pan with ghee or oil over medium heat.
- Fry the dumplings until they are golden brown, about 5-7 minutes per batch.
- Drain excess oil on paper towels.
- Prepare the Broth:
- In a large pot, heat the ghee or oil over medium heat.
- Add chopped onion, minced garlic, and grated ginger. Saute until the onion is translucent.
- Pour in the vegetable broth (or chicken broth) and bring to a boil.
- Serve Garudiya:
- Add the fried dumplings to the broth and simmer for 10-15 minutes or until they absorb the flavors.
- Season with salt to taste.
- Garnish with fresh cilantro, if desired.
- Serve hot and enjoy!
Note: You can adjust the amount of water in the dough and the cooking time according to your preference. Additionally, you can add other spices or herbs to the broth for extra flavor.
