Ingredients for the Sausages:
– 1 kg ground pork
– 4 tbsp chopped parsley
– 2 tbsp fresh oregano leaves, minced
– 1 large onion, finely chopped
– 3 cloves garlic, minced
– Salt and pepper to taste
– 4 tsp red wine vinegar
– 1/4 cup dry white wine
– 2 tbsp Worcestershire sauce
– Pinch of cayenne pepper (optional)
– Crusty bread rolls or baguettes
– Olive oil for grilling
– Condiments like yellow mustard, ketchup, and sliced red onions (for serving)
Instructions:
1. Prepare the sausage filling by combining all ingredients listed under “Ingredients for the Sausages” except the ground pork in a large bowl. Mix well. Add the ground pork and use your hands to incorporate everything together.
2. Shape the meat mixture into 6-8 equal sized sausages, approximately 15cm long. Make sure they’re slightly longer than the bread rolls. Refrigerate for at least 30 minutes before grilling.
3. Preheat your grill or barbecue to medium heat. Brush both sides of each sausage with olive oil and season with salt and pepper. Grill the sausages until cooked through, turning occasionally. Remove from heat and let them rest for a few minutes.
4. Slice the crusty bread rolls in half lengthwise and toast the cut sides under a broiler or on a griddle pan until slightly crispy.
5. Assemble your Choripán: place a cooked sausage on each piece of toasted bread, add desired condiments (mustard, ketchup), and top with sliced red onions. Add more toppings if you like. Place the other half of the bread roll or baguette over the filling and press gently to create a sandwich.
6. Serve your Choripán while still warm and enjoy!
