
## Tumpeng: A Traditional Indonesian Rice Dish with Rich Flavors
Tumpeng is a beloved Indonesian dish, particularly popular in Java, known for its fragrant rice cooked with coconut milk and spices, topped with an array of side dishes. The name “tumpeng” itself means ‘a mound’ or ‘a heap’, referring to the dish’s presentation – a generous portion of rice piled high, surrounded by various protein sources and vegetables.

Ingredients:

- 2 star anise
- 1 tsp kaffir lime leaves
- For the Side Dishes (choose your favorites):
- 250g chicken, pork or beef, sliced
- 150g tofu, cut into cubes
- 1 cup mixed vegetables (carrots, beansprouts, cucumber, bell peppers)
- 1/2 cup fried shallots
- 1 hard-boiled egg, sliced
- 3 hard-boiled eggs, peeled and halved
- 1 cup sambal (spicy sauce)
- Garnish:
- Fresh cilantro
- Fried shallots
- Roasted peanuts
Instructions:
- Prepare the Rice:
- Rinse the jasmine rice thoroughly under cold water until the water runs clear.
- Drain the coconut milk and combine it with water, salt, lemongrass, cinnamon stick, star anise, and kaffir lime leaves in a rice cooker or heavy-bottomed pot. Bring to a boil.
- Add the rinsed rice, reduce heat to low, cover, and simmer for about 15-20 minutes, or until all liquid is absorbed and the rice is fluffy. Remove from heat and let stand covered for 10 minutes.
- Cook the Side Dishes:
- In a separate pan, cook your chosen protein (chicken, pork, beef) until tender. Set aside.
- Sauté tofu in a little oil until golden brown.
- Steam or sauté the mixed vegetables until crisp-tender.
- Assemble the Tumpeng:
- Transfer the cooked rice to a large serving platter and shape it into a mound in the center.
- Arrange the side dishes (protein, tofu, vegetables) around the rice in separate sections.
- Top with fried shallots, sliced hard-boiled egg, halved boiled eggs, and sambal.
- Garnish:
- Sprinkle fresh cilantro, fried shallots, and roasted peanuts over the top.
Serve immediately and enjoy the aromatic flavors of Java!
