About Rasmalai

Rasmalai is a popular Indian dessert that originated in the city of Mysore. It’s a sweet treat made with paneer (Indian cheese), milk, sugar, cardamom, and nuts. The dish consists of soft, creamy paneer dumplings soaked in a rich, saffron-infused syrup flavored with cardamom and rosewater. Rasmalai is often served chilled, garnished with chopped nuts and dried fruits. This dessert is a favorite among Indians and is commonly enjoyed during special occasions and festivals.

Recipe: How to Cook Rasmalai

Ingredients:

For the Paneer Dumplings (Rasgullas):

  • 1 liter whole milk
  • 1/2 cup vinegar or lemon juice
  • 1/4 teaspoon citric acid powder (optional)
  • Sugar, for taste

For the Syrup (Ras):

  • 2 cups water
  • 1 cup sugar
  • 1/2 cup heavy cream
  • 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon rosewater (optional)
  • Chopped nuts and dried fruits, for garnish

Instructions:

Step 1: Make the Paneer Dumplings

  1. Boil the milk in a large saucepan over medium heat.
  2. Reduce the heat to low and add the vinegar or lemon juice. Stir gently to curdle the milk.
  3. Remove from heat and let it sit for 10-15 minutes, allowing the mixture to cool slightly.
  4. Line a cheesecloth or a clean cotton cloth with a wire mesh strainer over a large bowl.
  5. Carefully pour the curdled milk mixture onto the cheesecloth.
  6. Gather the edges of the cloth and squeeze the excess liquid from the paneer.
  7. Shape the paneer into small, round dumplings (rasgullas).
  8. Place the dumplings on a plate or tray.

Step 2: Make the Syrup

  1. Combine the water, sugar, heavy cream, saffron threads with their soaking liquid, cardamom powder, and rosewater (if using) in a large saucepan.
  2. Bring the mixture to a boil over high heat.
  3. Reduce the heat to medium-low and simmer for 10-15 minutes, or until the syrup thickens slightly.

Step 3: Assemble the Rasmalai

  1. Once the syrup is ready, add the paneer dumplings (rasgullas) to the syrup.
  2. Let them soak in the syrup for at least 30 minutes to allow the flavors to meld together.
  3. Serve the Rasmalai chilled, garnished with chopped nuts and dried fruits.

Tips:

  • Use high-quality paneer that is fresh and has a good texture.
  • Adjust the amount of sugar to your taste.
  • You can add other flavorings like vanilla or nutmeg to the syrup for extra depth.
  • Rasmalai can be made ahead of time and refrigerated for up to 3 days.
