
Samgyetang is a traditional Korean dish that translates to “ginseng chicken soup”. It is a nutritious and comforting meal made with whole young chicken, ginseng, rice, garlic, and jujube dates. This dish is often served during the summer season as it is believed to help cool down the body due to its refreshing ingredients.
To cook Samgyetang, you’ll need the following ingredients:
– 1 whole young chicken (around 1kg)
– 30g of fresh ginseng root (cleaned and sliced)
– 2 cloves of garlic, minced
– 6 jujube dates (pitted)
– 1 cup of glutinous rice (rinsed and soaked in water overnight)
– Salt to taste
– Water (enough to cover the chicken)
Instructions:
1. Rinse the chicken under cold running water, then pat it dry with paper towels.
2. Remove the giblets from the cavity of the chicken. If you want, you can use them for other dishes or discard them.
3. Stuff the cavity of the chicken with the sliced ginseng root, minced garlic, and pitted jujube dates.
4. Rub salt on the outside of the chicken to season it.
5. Place the chicken in a pot and pour enough water to cover it completely. Bring it to a boil over high heat, then reduce the heat to medium-low and let it simmer for about 1 hour or until the chicken is fully cooked.
6. While the chicken is cooking, drain the soaked glutinous rice and rinse it again.
7. After 30 minutes of simmering, add the soaked glutinous rice to the pot and continue cooking for another 15-20 minutes until the rice is cooked through.
8. Once done, remove the chicken from the pot and place it on a serving plate. Arrange the cooked jujube dates around the chicken.
9. Ladle the broth into individual bowls or cups and serve it hot with the cooked Samgyetang.

Note: If you’re having difficulty finding fresh ginseng root, you can use dried ginseng instead. Soak it in water for 2-3 hours before using it in the recipe. Also, feel free to adjust the amount of salt and garlic according to your taste preference. Happy cooking!
