For the rice cakes (bokoh):
- 2 cups cooked Indonesian-style rice (preferably day-old)
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- Vegetable oil for frying
For the peanut sauce (kuah kacang):
- 1/2 cup peanuts
- 1/4 cup coconut milk
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 2 tablespoons vegetable oil
- 2 tablespoons water
- Lime wedges (optional)
Instructions:
- Prepare the rice cakes:
- Mix cooked rice, flour, and salt in a bowl.
- Shape into small patties or cylinders.
- Heat about 1-2 inches of vegetable oil in a large skillet over medium-high heat.
- Fry the rice cakes until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- Make the peanut sauce:
- Grind peanuts using a food processor or blender until smooth.
- Heat coconut milk, garlic, ginger, soy sauce, sugar, salt, and 1 tablespoon vegetable oil in a small saucepan over medium heat.
- Add ground peanuts and stir well.
- Bring to a simmer and cook for about 5 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in water and remaining 1 tablespoon vegetable oil.
- Assemble and serve:
- Serve crispy rice cakes with warm peanut sauce for dipping.
- Garnish with lime wedges, if desired.
