- 8 corn tortillas, cut into strips
- Salt and freshly ground black pepper, to taste
- Optional garnishes: sour cream, shredded cheese (like Monterey Jack or Cheddar), chopped cilantro, diced avocado, lime wedges, and crispy tortilla strips
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent (around 5 minutes).
Stir in the minced garlic and finely chopped jalapeño pepper (if using), then cook for another minute, until fragrant.
Sprinkle in the cumin and dried oregano, stirring to coat the onion mixture with the spices. Cook for 30 seconds more, allowing the spices to toast slightly.
Pour in the chicken broth, diced tomatoes (with juice), and shredded or diced chicken. Bring the soup to a boil, then reduce heat to low, cover, and let it simmer for 15-20 minutes to allow flavors to meld together.
While the soup is simmering, prepare the tortilla strips: In a small bowl, toss the cut corn tortillas with a little oil, salt, and pepper. Arrange in a single layer on a baking sheet and bake at 375°F (190°C) for about 12-15 minutes or until golden brown and crispy.
