7. 2-3 tbsp ice water

1. 2 cups whole milk
2. 1/2 cup granulated sugar, divided
3. 1/4 cup cornstarch
4. 3 large egg yolks
5. 2 tsp unsalted butter
6. 1 tsp vanilla extract
For the Fruit Topping:
1. Assorted fresh fruits (like strawberries, blueberries, kiwi, peaches, etc.)
2. Glaze or apricot jam for shine (optional)
3. Whipped cream or powdered sugar for dusting (optional)
Instructions:
- Prepare the Crust: In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. In a small bowl, mix egg yolk and vanilla extract; add to flour mixture with ice water, pulsing until dough forms.
Press the dough into a tart pan (removeable bottom recommended), pricking the bottom with a fork. Chill for at least 30 minutes. Preheat your oven to 375°F (190°C). Bake the crust for about 18-22 minutes or until golden brown, then let cool completely on a wire rack.
Make the Pastry Cream: In a medium saucepan, heat milk with half of the sugar over medium heat until small bubbles form around edges (do not boil). Meanwhile, in a large bowl, whisk together egg yolks, remaining sugar, and cornstarch until pale and smooth. Gradually whisk in hot milk.
Pour the mixture back into the saucepan over medium heat, stirring constantly, until it thickens and coats the back of a spoon (about 5-7 minutes). Remove from heat; stir in butter and vanilla extract. Strain through a fine mesh sieve into a clean bowl. Cover with plastic wrap touching the surface to prevent skin formation, refrigerate until chilled.
Assemble the Tart: Once the crust is cool, spread the pastry cream evenly over it. Arrange your chosen fruits on top of the pastry cream in an attractive pattern.
Finishing Touches: If desired, you can add a glaze for shine. Warm 1/4 cup apricot jam in a small saucepan or microwave, then brush over the fruits. Allow the tart to chill in the refrigerator for at least 2 hours before serving. Just before serving, you can dust with powdered sugar or top with whipped cream.
