Ingredients:

- 1 can (14 oz) coconut milk
- 1/4 cup vegetable oil
- 1 teaspoon ground cumin

Instructions:
- Heat the oil in a large saucepan over medium heat.
- Add the onions, garlic, and ginger; sauté until the onions are translucent.
- Add the fish chunks and cook until they’re lightly browned on all sides (about 5 minutes).
- Pour in the coconut milk and stir to combine with the fish and spice mixture.
- Bring the mixture to a simmer, then reduce the heat to low and let it cook for 10-15 minutes or until the fish is cooked through and flakes easily.
- Season with cumin, paprika, salt, and black pepper to taste.
- Garnish with fresh cilantro leaves and serve hot over rice or with crusty bread.
