## Kokoda: A Tasty Australian Salad
Kokoda is a refreshing Australian salad that originated from Papua New Guinea. It’s a flavorful dish made with marinated chicken or fish, vegetables, and a tangy dressing. Often served as an appetizer or side dish, Kokoda showcases vibrant flavors and textures, making it a popular choice for summer gatherings.
Ingredients:
- 500g boneless, skinless chicken breasts or fillets, cut into thin strips
- 2 medium-sized cucumbers, sliced thinly
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh coriander leaves, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice (from about 2 limes)
- 1 tablespoon soy sauce
- 1 teaspoon sugar or to taste
- Salt and freshly ground black pepper, to taste
Instructions:
- Marinate the Chicken: Place the chicken strips in a bowl and add enough cold water to cover them. Let it sit for at least 30 minutes, preferably an hour, to help tenderize the meat. Drain and pat dry with paper towels.
Prepare Vegetables: While the chicken is marinating, prepare all the vegetables by slicing and chopping as described in the ingredients list.
Make the Dressing: In a small bowl, whisk together olive oil, lime juice, soy sauce, sugar, salt, and pepper until well combined.
Combine Ingredients: In a large bowl, combine chicken strips, cucumbers, bell peppers, red onion, cherry tomatoes, and coriander leaves. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
Chill and Serve: Cover the bowl and refrigerate the Kokoda for at least 30 minutes to allow flavors to meld together. Serve chilled as a refreshing side dish or appetizer. Enjoy it with crusty bread or rice for a satisfying meal.
Kokoda is best served fresh but can be stored in an airtight container in the refrigerator for up to 4 hours. This salad is a fantastic way to bring a taste of Australia to your table!
