
What is Pipián?
Pipián is a traditional Mexican sauce originating from the Puebla region. It’s a rich and creamy condiment made with pumpkin seeds (pumpkin piñon), spices, nuts, and chocolate. This flavorful sauce is often served over meats, vegetables, or used as a dip.
Recipe: Homemade Pipián Sauce
Ingredients:
- 1/2 cup raw pumpkin seeds (piñon)
- 1/4 cup almonds
- 1/4 cup raisins
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground anise
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 2 tablespoons dark chocolate chips (at least 70% cocoa)
- 2 tablespoons lard or vegetable oil
- 2 cups chicken broth
- 1 cup heavy cream or half-and-half
- Optional: 1/4 teaspoon cayenne pepper for some heat
Instructions:
- Roast the pumpkin seeds: Preheat your oven to 350°F (180°C). Spread the pumpkin seeds on a baking sheet and toast them for about 10-12 minutes, or until fragrant and lightly browned. Let them cool.
- Grind the nuts and spices: In a food processor or blender, grind the toasted pumpkin seeds, almonds, raisins, flour, cinnamon, anise, cumin, and salt into a fine powder.
- Melt the chocolate: In a double boiler or a heatproof bowl set over a pot of simmering water, melt the dark chocolate chips. Stir occasionally to prevent burning.
- Combine the ingredients: In a blender or food processor, combine the ground nut mixture, melted chocolate, lard or oil, chicken broth, and heavy cream or half-and-half. Blend until smooth and creamy.
- Adjust the consistency: If the sauce is too thick, add a little more chicken broth or water. If it’s too thin, add a bit more pumpkin seed powder or heavy cream.
- Add heat (optional): If you prefer a spicier pipián, add the cayenne pepper and blend well.
- Serve: Use your homemade Pipián sauce as a condiment for meats, vegetables, or use it as a dip. You can also store it in an airtight container in the refrigerator for up to 2 weeks.
