Ingredients:
– 500g beef or pork (cut into small cubes)
– 200g bob (pearl barley)
– 1 large onion, chopped
– 3 cloves garlic, minced
– 2 carrots, peeled and sliced
– 2 celery stalks, chopped
– 400g canned tomatoes
– 1 bay leaf
– 2-3 black peppercorns
– Salt and freshly ground black pepper to taste
– 2-3 tablespoons vegetable oil
– Fresh parsley, chopped (for garnish)
– Smoked sausage or bacon (optional)
Recipe:
- In a large soup pot, heat the vegetable oil over medium-high heat. Add the cubed meat and sauté until browned on all sides, about 5-7 minutes. Remove the meat from the pot and set it aside.
In the same pot, add the chopped onion and cook until softened, stirring occasionally, for about 3 minutes. Follow up with the minced garlic, carrots, and celery. Cook for another 2-3 minutes until the vegetables start to soften.
Return the meat to the pot and pour in the canned tomatoes (with juice). Add enough water to cover all ingredients by about 2 inches. Bring the mixture to a boil, then reduce the heat to low, and let it simmer gently for approximately 1 hour.
Stir in the bob (pearl barley), bay leaf, and black peppercorns. Return the soup to a gentle boil, then reduce the heat again and simmer for about 30-40 minutes, or until the barley is tender.
Season with salt and freshly ground black pepper according to taste. Remove the bay leaf before serving.
Serve bob chorba hot, garnished with fresh chopped parsley. For an extra special touch, add slices of smoked sausage or bacon on top for a traditional Romanian flavor.
