– 2 tablespoons cornstarch mixed with 2 tablespoons water
– Fresh parsley, chopped (for garnishing)
Recipe:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the cubed mutton and cook until browned on all sides, stirring occasionally to prevent sticking.
Reduce the heat to medium, add onions and garlic, and sauté for about 5 minutes until fragrant.
Stir in soy sauce, salt, and black pepper, then pour in beef or lamb stock. Bring the mixture to a boil.
Add potatoes, carrot, and rehydrated mushrooms to the pot. Reduce the heat to low, cover, and let it simmer for approximately 1 hour or until the meat is tender.
Once cooked, stir in cornstarch slurry to thicken the stew to your desired consistency.
