- 1 pound beef strips ( ribeye or sirloin), sliced into thin strips

- 2 tablespoons Gochujang (Korean chili paste)
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- Salt and pepper to taste
For the fried egg:
- 4-6 eggs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Cook the rice: Cook white rice according to package instructions or use leftover cooked rice.
- Prepare the vegetables: Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the bean sprouts, zucchini, carrots, mushrooms, bell peppers, and scallions. Cook until the vegetables are tender-crisp, about 5-7 minutes. Season with salt and pepper to taste.
- Prepare the beef: In a small bowl, whisk together soy sauce, Gochujang, sesame oil, garlic, salt, and pepper. Add the sliced beef and marinate for at least 30 minutes or up to several hours in the refrigerator.
- Cook the beef: Heat 1 tablespoon of vegetable oil in a separate skillet over medium-high heat. Remove the beef from the marinade, letting any excess liquid drip off. Cook the beef until browned and cooked through, about 3-5 minutes per side. Transfer to a plate and let rest for a few minutes.
- Fry the eggs: Heat a small non-stick skillet over medium heat with a dash of vegetable oil. Crack an egg into the skillet and cook until the whites are set and the yolks are cooked to your desired doneness. Repeat with additional eggs as needed.
- Assemble Bibimbap: Divide the cooked rice onto individual plates or bowls. Arrange the vegetables, beef strips, and a fried egg on top of the rice. Garnish with chopped scallions and serve immediately.
Tips and Variations
- Customize your Bibimbap by adding other ingredients such as kimchi (spicy fermented Korean cabbage), diced green onions, or pickled ginger.
- Use leftover vegetables or meat to make the dish more convenient.
- For a vegan version, substitute the beef with additional vegetables, such as tempeh or tofu, and use vegetable broth instead of soy sauce.
