  • Fresh cilantro or parsley, chopped (for garnish)

Instructions:

  1. Prepare the Tagine: Heat olive oil in a large tagine pot or deep skillet over medium-high heat. Season the lamb pieces with salt and pepper. Brown the meat on all sides in batches to avoid overcrowding the pan, about 3-4 minutes per batch. Remove the browned meat and set it aside.

  2. Sauté Vegetables: In the same pot, add the sliced onion and cook until softened, about 5 minutes. Add garlic, ginger, cumin, cinnamon, turmeric, and saffron (if using), and cook for another minute, stirring frequently to prevent burning.
