
Japchae is a traditional Korean dish that translates to “mixed vegetables” in English. It is a stir-fried noodle dish made with sweet potato starch noodles (dangmyeon), vegetables, and meat. The noodles are cooked separately and then mixed with sautéed vegetables such as spinach, mushrooms, carrots, and onions. Slices of beef or pork can also be added for a protein-rich dish. The ingredients are then seasoned with sesame oil, soy sauce, garlic, and sugar to create a flavorful and savory dish. Japchae is often served at special occasions, such as weddings or holidays, but it can be enjoyed any time as a delicious and healthy meal.
Ingredients:
– 12 oz sweet potato starch noodles (dangmyeon)
– 6 oz beef sirloin or pork belly, thinly sliced
– 4 cups mixed vegetables (spinach, mushrooms, carrots, onions)
– 1 tbsp sesame oil
– 2 cloves garlic, minced
– 2 tbsp soy sauce
– 1 tbsp sugar
– Salt and pepper to taste
– 2 eggs, beaten
– Vegetable oil for frying
Instructions:
1. Soak the sweet potato starch noodles in hot water for about 30 minutes until they are soft and flexible. Drain the noodles and rinse with cold water to remove excess starch. Set aside.
2. Heat a wok or large pan over high heat. Add some vegetable oil and stir-fry the beef or pork until browned. Remove from the pan and set aside.
3. In the same pan, add some more vegetable oil and stir-fry the mixed vegetables until they are soft and tender. Season with salt and pepper to taste. Set aside.
4. Heat the sesame oil in a separate pan over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
5. Add the beaten eggs to the pan and scramble them until they are cooked through. Remove from the pan and set aside.
6. In the same pan, add the sweet potato starch noodles and stir-fry for about 2 minutes until they are heated through.
7. Add the soy sauce, sugar, salt, and pepper to the pan with the noodles. Mix well and cook for another minute.
8. Add the cooked beef or pork, vegetables, and scrambled eggs to the pan with the noodles. Stir-fry everything together until all the ingredients are evenly combined.
9. Serve the japchae hot as a main dish or side dish. Garnish with sesame seeds if desired. Enjoy!
