Instructions:
- Prepare the Dough: In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Add warm water and vegetable oil, then mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Let it Rest: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Prepare the Filling: While waiting for the dough to rise, prepare the filling. Mix brown sugar and cinnamon in a bowl.
Assemble Hotteok: Once the dough has risen, punch it down gently and divide into small balls (about 1-inch diameter). Roll each ball out into a thin circle. Place a spoonful of the cinnamon sugar mixture in the center of each circle.
Seal & Shape: Bring the edges of the dough up around the filling to enclose it completely, creating a sealed pouch. Gently press down on the filled dough with your fingers to seal and create decorative patterns on top.
Cook Hotteok: Heat 2 tablespoons of vegetable oil in a non-stick pan over medium heat. Place the stuffed dough (Hotteok) into the pan, filling side up. Cook for about 3 minutes or until the bottom is golden brown.
Finish Cooking: Carefully flip each Hotteok and cook for another minute on the other side, then reduce heat to low. Cover the pan with a lid and let it cook for another 2-3 minutes until the dough is fully cooked and the filling starts to melt slightly.
Serve: Remove from heat and serve Hotteok warm. It’s often enjoyed sprinkled with more cinnamon sugar on top.
